Sone Papdi

Sone Papdi

Sone papdi, sometimes written son papdi or soan papdi, is a popular Indian sweet made by pulling and folding a hot sugar and gram flour syrup over and over until it transforms into thousands of fine, hair-like strands. The result looks like edible spun silk and melts almost instantly on the tongue, usually flavored with cardamom and topped with pistachio. It needs dry conditions to hold its shape, since humidity collapses the strands back into a sticky mass. You can find it in any Indian grocery if you would rather not pull sugar at home.
