Soubise

A soubise is a classic French sauce built on a base of slowly sweated onions. The onions are cooked low and slow in butter until completely soft and translucent, then combined with bechamel or cream and pureed until silky. The result is mild and gently sweet, with none of the sharpness of raw onion. At home, soubise makes an elegant base beneath grilled or roasted meats, especially beef, and can be enriched with Parmesan or Gruyere. Unlike many sauces, it can be made ahead and reheated gently, making it a reliable component for composed plates.
