Suspending a Jelly Insert

To hide a soft centre inside a moulded cream so it sits in the middle rather than sinking or floating, chill the first layer of cream until only just set - firm enough to hold a spoonful but still tacky. Spoon the jelly insert into a shallow well, then top with more cream at room temperature to seal it. If the base cream is fully set the insert sits on top; if it is too loose, the insert sinks. Chill fully, ideally overnight, before unmoulding.
