Using Caramel vs Golden Syrup

Most bakers use a simple caramel made of sugar and butter to help keep their fruit in place at the bottom of their tins for upside down cakes. However, golden syrup can be used as a time-saving substitute, though it's quite unusual. Using golden syrup underneath will make the cake very sweet and creates a golden brown appearance when turned over. Traditional caramel provides better flavor balance and is the preferred method, though it requires more time and attention to prepare properly.
