Vanilla Peach and Raspberry Upside Down Cake
Vanilla Peach and Raspberry Upside Down Cake

After work at a nursery in Leicester, Manisha rushes home to cook all the family meals for her dad and brothers. Her quick and easy golden syrup top sponge features fresh raspberries and peaches. She used golden syrup instead of traditional caramel underneath the fruit to save time, hoping it would create a golden brown appearance when turned over. She used a square tin rather than round, saying it's more pleasing to the eye and more modern. She had tested this recipe with her dad and two brothers who loved it.

Mary Berry questioned the use of golden syrup underneath, noting 'That's quite unusual to use golden syrup underneath. It'll make it very sweet, won't it?' Paul Hollywood asked if she'd had problems using golden syrup before, to which she said no. The judges were concerned about her not lining the tin.
