What is Gremolata

Gremolata is an Italian condiment traditionally made from finely chopped parsley, lemon zest, and garlic — though variations abound. It provides a fresh, bright counterpoint to rich braised dishes, most famously ossobuco. The key is balance: lemon zest (not juice) for fragrance without acidity, garlic for punch, and herbs for freshness. This recipe adds tarragon for its anise notes. Use minimal oil — just enough to bind without creating a wet paste. The texture should be loose and sprinkle-able. Too much of any single element (especially lemon or garlic) throws off the harmony completely.
