"Justice 97"

"Justice 97"

Liv: "I am serving up "Justice 97", and the inspiration is Anne Williams and the Hillsborough disaster. She campaigned to bring justice for the 97 who unfortunately died."


Liv: "I'm going to be doing a take on a lobscouse pie. So we've got mushroom, which is going to act as the kind of meat, beetroots, which are going to be pickled. And then there's also going to be some baby beetroots that are going to get roasted and then glazed in a beetroot juice reduction."


Paul Ainsworth: "And it looks like you're making your own pastry as well."


Liv: "Definitely. Typically on (football) match day, people used to have scouse, or lobscouse pies. So that's kind of another, like, play on it."

Paul Ainsworth: "Hi, Liv. Smells amazing. What can I taste?"


Liv: "I've got a little black garlic ketchup."


Liv: "I'm most worried about the pickled beetroots. That's a big one for me. Just making sure that they obviously come off with enough time to then pickle them."


Plating


Liv starts plating with black garlic ketchup.


Liv: "And then I've got my beets that are just glazed in their own juice and carrots."


Paul Ainsworth: "What have the carrots been cooked in?"


Liv: "They have been blanched in a little bit of veg stock and then bleached in a carrot juice caramel."


She adds the maitake mushrooms and the smoked potato espuma.


Liv: "And just a few little wild garlic buds."


Paul Ainsworth: "What's the sauce?"


Liv: "A mushroom gravy made for a little bit of the mushroom garum. And mushroom stock."
