Toby creates an inventive illusion bake with mini meringue apple pies featuring candied walnuts. His sweet shortcrust pies contain vanilla custard, stewed apples, and candied walnuts, topped with a lattice of piped meringue designed to look like woven pastry. Toby: "So I'm making mini meringue apple pies with candied walnuts with an inventive illusion bake." 


Toby: "I'm going to dome the top of it as well so it looks like a very full apple pie." 


Toby: "Because it's supposed to look like pastry, so I've dyed my meringue (we think he used coffee)." 


Toby: "So it's a sweet, short crust. Then there's a custard in the base. Stewed apples, candied walnuts and meringue." 


Toby: "This is just about the height of my artistic talent, I think."

Paul Hollywood: "Love the look of them." 


Prue Leith: "They look absolutely lovely." 


Paul Hollywood: "Such a clever idea to make them look like little apple pies with the meringue." 


Prue: "It's lovely and sharp and the pastry is just delicious. And I like the meringue." 


Paul: "The reason why I like it is because of the tartness in the apple, the texture inside there as well. We know that's meringue, but actually it's not overly sweet. It's delicious and I've never seen that lattice work with meringue before." 


Paul gives Toby a handshake. Prue: "Well deserved. handshake. The pie is lovely." 


Toby: "That couldn't have gone any better. I don't think they actually gave me any critique at all."
