Tom: "We've got a coffee soaked biscotti at the bottom dark chocolate mousse and then we've got a white chocolate masala mousse on the top. And then that's all set in a white chocolate with a touch of dark chocolate cup." Tom avoided being too similar to tiramisu by adding coffee soaked biscotti to his cups to separate two different flavored mousses. Tom noted biscotti is Italian for twice cooked so his needed to be better so it went straight back in. After judging Tom reflected that you cannot ask for better feedback and that he was chuffed and that the biscotti was beautiful and that he did actually taste it and the texture on the mousse was absolutely perfect.

Prue: "It's beautifully thin Tom. And I love the mousse. I think that's the perfect texture." Tom: "Oh that's great to hear." Paul: "What it is it's a balance of the sweet and the bitter. Even that chocolate brings something to it as well. So the whole thing together it is exceptional. Well done." Prue: "I absolutely agree. That's what it deserves." Paul: "That could be for sale in a patisserie shop in the middle of Paris. I'll probably do extremely well." Tom: "Thank you so much guys."
