Broccoli and Tomato Quiche and Mascarpone Squirrel Tartlet
Voice-Over: "To create a creamy texture for her fillings, Kim Joy is turning tofu. Kim Joy is also using tofu in her second tart to create vegan mascarpone, finished with an image of a star of a previous squirrel, complete with knots."
Prue Leith: "It's very neat, very artistic. Baked well. Nice color. It's quite nice. The layers. The coconut pastry, it's amazing. I think the flavors are great."
Paul Hollywood: "You've got the cooling that comes from the tofu before you hit the onion. Absolutely delicious. I'd never have said that would have gone together. Yeah, I like that one. Remind me this one again?"
Kim-Joy: "So that's got tofu, broccoli, onion, the tomato on top. It's got a bit of indian black salt for the egginess."
Paul Hollywood: "That's delicious. The balance of flavour is very good. Again, the tofu is bringing that little bit of coolness to it and the pastry is flaky. It's buttery. Thank you. Very good job on both them. Very good "job. Looks good.
