San Marzano tomatoes are a specific variety of plum tomato, known for their sweetness, low acidity, and meaty texture, making them ideal for sauces and canning. They are named after the town of San Marzano sul Sarno, near Naples, Italy, and are prized for their quality and flavor, especially when grown in the volcanic soil of the Agro Sarnese-Nocerino region. While they can be grown elsewhere, the Italian-grown, DOP-certified San Marzanos are considered the "true" variety due to their unique growing conditions
