Roast Sweet and Sour Parsnip with Pea Mousse

This is a wonderful amuse bouche, or a light appetizer. It is a slice of parsnip, crusted in a sweet, sour, spicy, tangy coat and served with a soothing pea , mint and parsnip mousse.
