Alison Hammond: "The shape of the buns can be anything you like, but the flavour and decoration MUST mean something to you."

Paul Hollywood (behind the scenes): "The bakers have to make eight IDENTICAL iced buns. That's not easy, because this is bread, not cake."

Prue Leith: "The key to all breads is to get it nice and light through KNEADING. Inexperienced bakers tend to play with the dough, instead of giving it a bit of welly."

Paul Hollywood: "I'd like to see something inside it, too. So ... cream ... jam ... curd ... custard ..."

Prue Leith: "I'd like the icing to be really smooth, neat around the edges and to taste spectacular."

Greg's Custard Iced Buns

Greg James: "Iced buns were a staple of my childhood. In Bromley, there was a baker on Chatterton Road called Hilda. Hilda Baker. That wasn't her name. But in honor of Hilda Baker, I'm going to do iced buns, but add my favorite food in the world to it. Custard."

Prue Leith: "Lovely."

Voice Over: "Celebrating his absolute favorite food, Greg's buns will be filled with a delicate creme mousseline and topped with custard flavoured icing."

Dermot's Fruit of the Forest Iced Buns

Dermot O'Leary: "Okay, so my ice buns are fruit of the forest ice buns. Two reasons. Firstly, I'm Catholic. I went to a church in England primary school, which meant I had to get a catechism on the Saturday. By way of recompense, my dad went by the baker's and we got an ice bun. So I love an ice bun. And then secondly, I'm a kid of the eighties and fruits of the forest was everywhere in the eighties."

Voice over: "Inspired by childhood memories, Dermot is filling his buns with fruits of the forest jam and chantilly cream. He's using mixed berry puree to flavour his icing. And he will decorate with scattered berries and gold leaf."

Paul Hollywood: "I think it could be lovely or ... It could be a total disaster."

Fern's Cardamom and Orange Iced Buns

Fern Brady: "I'm making Swedish cardamom buns. I'm not a calm person. I'm a very stressy person. And cardamom is really calming. The thing is, when I make them for people at home, they really like them, but I feel like making them for Paul, Hollywood's going to be different."

Voice over: "Hoping to calm herself by sticking to a recipe she knows, Fern is making Swedish style knotted buns which she will flavor with cardamom and top with a complementing orange icing."

Paul Hollywood: "How have you prepped this?

Fern Brady: "Oh, I've made them so many times before, but I don't know if they're going to be up to your standard."

Paul Hollywood: "Do what you feel is comfortable for you. Good luck."

Mel's Rum and Raisin Iced Buns

Mel B: "I am making some caribbean inspired ice buns because my dad's from Nevis. It's the smallest island of the Caribbean. So I got some local rum and raisins that I've soaked in the rum."

Prue Leith: "Lovely, because I want it to have flavor."

Drawing on her caribbean heritage, Mal B also plans to use her dad's favorite rum to spice up her icing, which will be inspired by the colors of the Nevis flag. (Nevis is the smallest domesticated island in the Caribbean.)"
