Prue Leith: "Quiche has a very bad name, but it is one of the most delicious things you can possibly have. Almost anything can go into a savory quiche, and if it's freshly baked it's just wonderful."


Paul Hollywood: "Perfect quiche for me is all about the crust. We're looking for a nice shortcrust pastry that crumbles and is well baked with no soggy bottom."
