Matt Lucas: "Today, the judges would like you each to bake a cheesecake with a biscuit base or case. You can use any flavours or combination of flavours you'd like, but there must be a decorative finish."

Paul Hollywood: "The signature challenge our celebrities are going to have to face is a baked cheesecake. Think of that classic New York baked cheesecake. It's about getting the mixture consistency just right. The base could be ginger biscuits, digestives ... could be anything. But we want a baked cheesecake. Nice, crispy base, and a fantastic topping."

Prue Leith: "I love the celebrities being here. They really are such a joy in the tent because they're so relaxed. If they practice this at all, they should succeed. The main thing is that they're enjoying it, and they're here for a good cause."
