A miniature Cornetto-style waffle cone filled with apple cider sorbet. Mark heats sugar and adds it to a cider base with setting agents to build the sorbet. A waffle batter is folded with melted butter and shaped into slender cones, then painted inside with dark chocolate and rolled in crushed roasted nuts. The cone is filled with the freshly churned cider sorbet, topped with dehydrated apple and finished with a reduced apple syrup. 


Mark: "A side of sorbet". 


Mark: "These are my waffle batter to make the ice cream cones." 


VETERAN ROUND (Simon Rogan, blind tasting): Simon: "It's refreshing." 


Simon: "Super fresh with the apple." 


Ciaran: "Delicious, mate. Really good." 


Jeffrey: "Phenomenal." 


Three chefs ranked the pre-desserts least to most favourite; Mark's apple cider cone was placed second. Simon correctly identified it as Mark's. 


JUDGING ROUND (Tom Kerridge, Lorna McNee, Phil Wang, guest Ben Whitehead): Phil Wang: "I love that. It's more like a sorbet than an ice cream. Very good. Really tasty." 


Phil Wang: "Absolutely beautiful." 


Lorna McNee: "I love the taste of that apple cider ice cream. For me, it made me a pear drops and a little memory of childhood. I loved it." 


Tom Kerridge: "Crisp, clean, bit melty. Absolutely delicious. That's got banquet nightmare written all over it for me."
