Beetroot and Ginger Cake (Diwali 2-tier cake)

Two separate cakes stacked together: a parsnip cumin and fennel cake on the bottom tier and a beetroot ginger and walnut cake on the top tier. Both cakes are layered with treacle and cinnamon Swiss meringue buttercream and blackcurrant jam before being stacked and decorated with beetroot and parsnip foliage. The entire creation is surrounded by a tempered chocolate collar. Sumayah: "I'm doing a parsnip, cumin and fennel cake, and I'm doing a beetroot, ginger and walnut cake as well. So it's going to be two tiers. I want to do two because I'm not confident in either of them. So hopefully one tastes are good." Sumayah was the only baker to tackle two separate cakes.
Paul Hollywood: "What a great looking cake." Prue Leith: "I love the colors. That chocolate fence is just exquisite. Just wonderful." Prue Leith: "I love the flavor. Actually I like the texture too." Paul Hollywood: "It's a bit like a sticky toffee pudding in a cake. It is quite delicious. Every element." Prue Leith: "I almost don't want to eat anything else. I just want to get stuck in and finish this." Prue Leith: "She is one hell of a baker." Paul Hollywood: "That's one of the best cakes I've [had] for a long time. I'm going to take some home with me tonight. That's excellent. Fantastic."
