{Nadia}: "I'm making fresh brioche. Can really smell all that almonds." Cherry and almond flavored Swiss roll with cherry liqueur in the jam and almond essence in the sponge, inspired by Italian father Francesco.

Paul: "Did you put Armagnac essence in there? I think there's a bit too much the almond extra. I agree it's a little bit heavier, but the cherries needed more of a punch to balance out the almond. They're a little bit too sweet."
