Focaccianista

Melissa: "My focaccianista is what I'm doing."

A focaccia decorated as a fashion-house portrait of a woman in a printed dress, topped with roasted butternut squash, pre-roasted grapes for the dress, and a caramelised onion jam finished with apple cider vinegar and maple syrup.

Melissa: "It's basically my favorite fashion house of New York, who I'm obsessed with. And so it's a tribute to her and all the fashion girlies of New York."

Melissa on the onion jam: "When it caramelizes a bit more, I pour in apple cider vinegar and maple syrup. It doesn't smell great. And actually, when I make it at home, David and Allegra get so mad at me."

While decorating: "This is like the eyes give her a little nose and mouth." Melissa: "It's surreal to think that the king of bread is going to be trying my focaccia and giving me critique on it. But I'm happy with the bake."

Melissa was named Star Baker for Bread Week. No Hollywood Handshake was awarded.

Paul: "This is a face." Melissa: "There's lips." Paul: "Overall, it looks quite attractive. It feels quite nice and light." Prue: "I think it looks really good." Prue on the caramelised onion: "That caramelized onion. So sweet. It's really good." Paul: "I really like the flavor of this, including the squash. It's nice and light, but you needed a little bit more liquid just to open that up a little bit more."
