Lemon and Linseed Loaf Cake
Lemon and Linseed Loaf Cake

For his lemon loaf cake, Mike broke with tradition. "So instead of lemon and poppy seed, I'm going with lemon and linseed, which are from our farm. The eggs are all from the farm, too."

Voice-over: "Soaked in lemon and lime syrup and covered in lemon buttercream, Mike marbled his lemon and linseed loaf cake."

Paul Hollywood: "Looks like a scrambled egg there on the top! And you have a big crack as well."

Prue Leith: "It's certainly swirly."

Paul Hollywood: "You would struggle to identify linseed in there, but the lemon level is perfect."

Prue Leith: "It's quite strong. It's strong in color, and it's strong in flavor."

Paul Hollywood: "It's a shame we've had a bit of melting - that comes down to timing."
