Paul Hollywood: "The technical challenge for me is probably the most important because for me, it's not just about passion and flair. It's about their ability and what they're capable of doing. And that, in this environment, is going to be a corker."
Host: "So Baker's Challenge 2 is now to come. It's the Victoria Sandwich Challenge. Now, what we're looking for here is a perfect technical rendering of an exquisite classic. We need a bit of focus to add a little bit of pressure. It is Lady Mary Berry's own recipe, so be on guard."
"In this technical challenge, each home baker has been given exactly the same list of ingredients, but no instructions on how to combine them. They must use their experience and skills to work it out. They can use the all in one method, mixing all the ingredients together at once. It's quick, but runs the risk of an uneven mix and therefore an uneven bake. Alternatively, they can cream the butter and sugar together and then add the eggs and flour. This may seem more thorough, but the risk of overbeating is greater, creating a mixture that results in a heavier sponge."
