FOR THE CHAI SPICE BLEND (MAKES ABOUT 3 TABLESPOONS): 1 tbsp (7 g) ground green cardamom 2 tsp (5 g) ground Ceylon cinnamon 1 tsp (2 g) ground ginger 1/2 tsp (1 g) ground cloves 1/2 tsp (1 g) finely ground black pepper 1/4 tsp (0.5 g) ground fennel seed


FOR THE SAFFRON PISTACHIO COOKIE CRUMBLE: Generous pinch saffron threads, crumbled (optional) 1 tsp (5 ml) warm whole milk, for blooming the saffron (optional) 4 tbsp (55 g) unsalted butter, cold and cubed 1/2 cup (65 g) all-purpose flour 1/4 cup (50 g) light brown sugar, packed 1/3 cup (40 g) shelled pistachios, finely chopped 1/4 tsp (0.5 g) chai spice blend (from above) Pinch fine sea salt


FOR THE CHOCOLATE CARDAMOM BISCUIT SPONGE: 1/2 cup plus 1 tbsp (70 g) all-purpose flour 1/4 cup (22 g) Dutch-process cocoa powder 1 1/2 tsp (4 g) chai spice blend (from above) 1/4 tsp (1.5 g) fine sea salt 3 large eggs, separated, at room temperature 1/2 cup plus 2 tbsp (115 g) granulated sugar, divided 3/4 tsp (4 ml) vanilla extract 3 tbsp (40 g) unsalted butter, melted and cooled, plus extra for the pans


FOR THE CHAI SOAKING SYRUP: 1/2 cup (120 ml) water 1/4 cup (50 g) granulated sugar 4 green cardamom pods, crushed 1 cinnamon stick 2 whole cloves 2 strong black tea bags (Assam preferred)


FOR THE DARK CHOCOLATE GANACHE: 8 oz (225 g) dark chocolate, 70% cacao, finely chopped 3/4 cup (180 ml) heavy cream 1 tbsp (14 g) unsalted butter, softened Pinch fine sea salt 1-2 tbsp (15-30 ml) heavy cream, extra and warm, for loosening the glaze


FOR THE JAGGERY CARAMEL: 3/4 cup packed (140 g) jaggery (gur), grated or finely chopped 1/4 cup (60 ml) water 1/2 cup (120 ml) heavy cream, warmed 2 tbsp (28 g) unsalted butter 1/4 tsp (1.5 g) fine sea salt


FOR THE SPICED CHANTILLY CREAM: 2 tbsp (30 g) mascarpone, cold 2 tbsp (15 g) powdered sugar 3/4 tsp (2 g) chai spice blend (from above) 1/4 tsp (1 ml) vanilla extract 3/4 cup (180 ml) heavy cream, well chilled


TO FINISH: 2 tbsp (15 g) slivered pistachios 1 tsp food-grade dried rose petals (optional)


EQUIPMENT: Two 6-inch (15 cm) round cake pans, bases lined with parchment paper Stand mixer or electric whisk with whisk attachment Digital scale Fine-mesh sieve Heavy-bottomed 2-quart saucepan Instant-read thermometer Long serrated knife or cake leveller Piping bag fitted with a 1/2-inch plain round tip Offset palette knife Turntable (optional)

Method

STEP 1: MAKE THE CHAI SPICE BLEND

Combine the ground green cardamom, cinnamon, ginger, cloves, black pepper and fennel in a small jar and shake well. Make this first: three separate components draw on it. If your cardamom is not freshly ground, grind it — pre-ground cardamom loses its top note within weeks, and that top note is the whole argument of this cake. You will have blend left over; it keeps airtight for a month.


STEP 2: BLOOM THE SAFFRON (OPTIONAL)

Heat the oven to 350F / 175C. If using saffron threads, crumble them into the teaspoon of warm milk and leave to bloom for 10 minutes while you work.


STEP 3: RUB THE CRUMBLE

Rub the cold cubed butter into the flour, brown sugar, chopped pistachios, 1/4 tsp chai blend and salt until the mixture clumps into irregular pea- to pebble-sized pieces. Add the bloomed saffron and its milk if using, and toss briefly — do not work it smooth. Irregular sizes are the point; uniform crumbs give you sand.


STEP 4: BAKE THE CRUMBLE

Spread on a lined tray and bake for 15-18 minutes, stirring once at the 10-minute mark, until dry and deep gold. Cool completely. Keeps airtight for a week.


STEP 5: PREPARE THE PANS

Reduce the oven to 340F / 170C. Butter two 6-inch pans and line the bases with parchment paper. Do not flour the sides — a biscuit sponge needs to climb them.


STEP 6: SIFT THE DRY INGREDIENTS

Sift the flour, cocoa, 1 1/2 tsp chai blend and salt together twice. Twice is not fussiness: cocoa clumps, and a clump in a whipped-egg sponge deflates everything around it.


STEP 7: WHISK THE YOLKS

Whisk the three yolks with half the sugar (about 57 g) until pale, thick and falling in a ribbon that holds three seconds on the surface, about 4 minutes. Whisk in the vanilla.


STEP 8: WHIP THE WHITES

In a clean bowl, using a stand mixer or electric whisk, whip the whites to soft peaks, then rain in the remaining sugar in three additions, whipping to firm, glossy peaks that hold a hooked tip. Stop short of stiff, dry peaks.


STEP 9: FOLD THE BATTER

Fold one-third of the whites into the yolk base to slacken it. Fold in the remaining whites in two additions, alternating with the sifted dry ingredients, using a large spatula and a cut-and-turn motion. Stop the moment the last streak of cocoa disappears.


STEP 10: ADD THE BUTTER

Take a large spoonful of the batter into the melted butter, stir it thoroughly to lighten, then fold that back into the main batter. Adding butter straight to a whipped sponge knocks the air out; this two-stage method does not.


STEP 11: BAKE THE SPONGES

Divide between the pans, level gently, and bake for 20-24 minutes until the tops spring back and a skewer comes out with a crumb or two. Cool for 10 minutes in the pans, then turn out onto a rack and cool completely.


STEP 12: MAKE THE CHAI SOAKING SYRUP

Bring the water and sugar to a simmer with the crushed cardamom pods, cinnamon stick and cloves. Remove from the heat, add the tea bags, and steep for 6 minutes — no longer, or the tannin turns bitter against the cocoa. Strain and cool.


STEP 13: MELT THE GANACHE

Place the chopped 70% chocolate in a bowl. Bring the cream just to the point where it shivers at the edges — not a rolling boil — and pour it over. Leave undisturbed for 2 minutes.


STEP 14: EMULSIFY THE GANACHE

Starting at the centre with a small whisk or spatula, stir in tight circles, drawing the cream outward as the emulsion takes. It will look broken and grainy before it comes together; keep going. When it is uniform and glossy, stir in the butter and the pinch of salt.


STEP 15: DIVIDE THE GANACHE

Set aside about one-third for glazing and keep it at room temperature. Leave the remaining two-thirds to firm at cool room temperature for 45-60 minutes until it holds a soft peak and spreads like thick frosting. Do not refrigerate it — chilled ganache sets hard and tears the sponge.


STEP 16: COOK THE JAGGERY

Combine the jaggery and water in a heavy saucepan over medium heat, stirring until fully dissolved. Bring to a simmer and cook for 5-7 minutes until slightly thickened and deeply fragrant. Jaggery is already dark, so you cannot judge doneness by colour the way you would with white sugar — go by aroma and by the way it coats a spoon.


STEP 17: FINISH THE CARAMEL

Off the heat, whisk in the warm cream in a steady stream (it will bubble up sharply), then the butter and salt. Return to low heat for 2 minutes if it needs tightening. Strain through a fine-mesh sieve — unrefined jaggery almost always carries a little sediment. Cool to a thick, pourable consistency.


STEP 18: SEASON THE MASCARPONE

Whisk the mascarpone briefly with the powdered sugar, 3/4 tsp chai blend and vanilla until smooth and lump-free.


STEP 19: WHIP THE CHANTILLY

Add the chilled heavy cream and whip on medium — not high — to firm peaks. Medium speed matters here: with mascarpone in the bowl the mixture tips from firm to grainy very quickly, and there is less cream than usual to play with. Transfer to a piping bag fitted with a 1/2-inch plain round tip and refrigerate.


STEP 20: SPLIT AND SOAK THE SPONGES

Level the domes off both sponges and split each horizontally, giving four layers. Brush each cut face generously with the chai syrup — a biscuit sponge is drier by design and wants the moisture.


STEP 21: FILL THE LAYERS

Set the first layer on your serving plate. Spread a generous 2-3 mm of the thickened ganache right to the edge. Pipe the chantilly in a single ring of touching dots around the perimeter only, leaving the centre bare, and drizzle jaggery caramel into that bare centre. Scatter a spoonful of crumble. Repeat for the second and third layers. Resist the urge to spread the cream edge to edge: the perimeter ring gives you the band of cream at the cut face without the volume that would outweigh the chocolate.


STEP 22: CHILL BEFORE GLAZING

Top with the fourth layer, cut side down. Chill the assembled cake for 30 minutes to set before glazing.


STEP 23: GLAZE THE CAKE

Warm the reserved glazing ganache to just pourable, about 90F / 32C, stirring in 1-2 tbsp of extra warm cream so it flows rather than sits. Pour over the top, coaxing it to the edge with an offset palette knife so it breaks over the sides in irregular drips. Chill for 30 minutes.


STEP 24: FINISH AND GARNISH

Pipe seven or eight chantilly dots around the crown, drizzle jaggery caramel over the top, and scatter the crumble, slivered pistachios and, if using, a few rose petals. Serve with the remaining caramel alongside in a small jug.


STEP 25: REST AND SLICE

Let the cake stand for 20 minutes at room temperature before cutting. Slice with a long knife dipped in hot water and wiped dry between cuts; the four-layer cross-section is the whole presentation and deserves a clean edge.
