FOR THE WHIPPED WHITE CHOCOLATE COCONUT GANACHE: 100 g (3 1/2 oz) white chocolate, good quality, finely chopped 55 ml (scant 1/4 cup) coconut cream, hot - the thick part of a chilled tin Finely grated zest of 1/2 lime (optional) 55 ml (scant 1/4 cup) coconut cream, cold
FOR THE FINANCIER BATTER: 58 g (1/4 cup) unsalted butter 65 g (1/2 cup + 1 tbsp) icing (powdered) sugar, sifted 35 g (1/3 cup) ground almonds 12 g (3 tbsp) fine desiccated coconut, unsweetened 22 g (3 tbsp) plain (all-purpose) flour, sifted 1/8 tsp fine sea salt 2 large egg whites (65 g), at room temperature, no trace of yolk Finely grated zest of 1 lime 1/8 tsp coconut extract (optional, if your coconut is mild)
FOR THE MANGO PUREE: 150 g (1 cup) ripe mango flesh, Alphonso or Ataulfo if you can get them 12 g (1 tbsp) caster (superfine) sugar 10 ml (2 tsp) lime juice, from the zested limes 2 g (3/4 tsp) cornflour (cornstarch), or 1.5 g pectin NH for a cleaner set
TO DECORATE: 1/2 small fresh mango, cut in neat 5 mm dice 10 g (1/4 cup) coconut flakes, toasted Finely grated zest of 1 lime
EQUIPMENT NEEDED: Financier tin or shallow rectangular molds, about 1.5 cm (5/8 inch) deep - a silicone financier mold works well Small heavy-based saucepan, light-colored so you can watch the butter Fine-mesh sieve and a heatproof bowl Balloon whisk - the batter should not be aerated Electric hand mixer, for the ganache only Blender or food processor for the mango puree Digital scales - portioning by weight is what holds the sponge depth Two piping bags: a plain nozzle for the batter, a small star or plain nozzle for the ganache Microplane or fine grater for the lime zest
Method
STEP 1: MAKE THE GANACHE (THE DAY BEFORE, OR 4 HOURS AHEAD)
Put the chopped white chocolate in a bowl. Heat 55 ml of the coconut cream with the lime zest, if using, until it is just below a simmer - do not boil it. Pour over the chocolate, wait a minute, then stir from the centre outwards until glossy and fully emulsified. Stir in the remaining 55 ml of cold coconut cream. Cover against the surface and refrigerate for at least 4 hours, ideally overnight. White chocolate ganache is slow to set and there is no shortcut, so make it first.
STEP 2: BROWN THE BUTTER
Melt the butter in a light-colored pan over medium heat. It will foam, then quieten, then the milk solids will start to color at the base. Swirl continuously and take it off the heat when the solids are hazelnut brown and it smells nutty - about 4 to 5 minutes at this quantity. Pour it immediately through a fine sieve into a bowl to stop it cooking, keeping the browned solids if you like a deeper flavor. Cool to warm room temperature, not cold.
STEP 3: MAKE THE BATTER
Whisk the sifted icing sugar, ground almonds, desiccated coconut, flour and salt together. Add the egg whites and whisk with a balloon whisk just until smooth - a few seconds. This is not a meringue and no air should be beaten in; an aerated financier domes and goes cakey. Pour in the warm brown butter in a steady stream, whisking until the batter is glossy and homogeneous. Fold in the lime zest and coconut extract last, so the zest oils stay bright.
STEP 4: REST THE BATTER
Cover and refrigerate for at least 1 hour, up to 24. Resting hydrates the flour and almonds and firms the butter, and cold batter hitting a hot oven is what produces the thin, crisp eggshell crust a financier is judged on. Skipping this step is the quiet reason home financiers come out soft all the way through.
STEP 5: MAKE THE MANGO PUREE
Blend the mango flesh with the caster (superfine) sugar and lime juice until completely smooth, then pass through a sieve. Warm about a third of it in a small pan, whisk in the cornflour slaked with a teaspoon of cold water, and cook for a minute until it thickens and loses its raw starch taste. Whisk back into the rest of the puree and cool. You want it thick enough to sit in a neat spoonful on top of a financier without running off the edge.
STEP 6: BAKE
Preheat to 200C / 400F. Butter and flour the financier molds or use a spray release. Pipe about 20 g of cold batter into each of 12 cavities - no more than two-thirds full. Bake for 10 to 12 minutes, until the edges are set and browned and the centre springs back to a light touch. Take them out at that moment; they will finish in the residual heat of the tin. Turn out onto a rack after 2 minutes and cool completely. A correctly baked financier has a crisp top and edges over a visibly moist, close crumb - if the crumb looks dry and open, the bake ran long and the next tray needs a minute less.
STEP 7: WHIP THE GANACHE
Whip the chilled ganache with an electric hand mixer on medium speed until it holds soft, pipeable peaks - 30 to 60 seconds is usually enough. Stop early. White chocolate ganache splits into a grainy, greasy mess if overwhipped, and it cannot be brought back. Transfer to a piping bag.
STEP 8: ASSEMBLE AND DECORATE
Spoon or pipe a small pool of mango puree along the centre of each cooled financier. Pipe the whipped ganache in neat peaks or a single clean bulb alongside - against the thinner sponge the topping now reads as generous rather than as a hat on too much cake. Work to one repeatable shape rather than freestyling each one; uniformity is what lifts a tray of financiers. Finish with a dice of fresh mango, a toasted coconut flake, and lime zest grated over at the last second.
STEP 9: SERVE
Financiers are at their best within a few hours of baking, while the crust is still crisp. Decorate as close to serving as you reasonably can - the puree softens the top over time, which is exactly the direction this bake does not need to travel.
