Ingredients

2 plantains White vinegar juice of one lemon 1 teaspoon white miso 3 tablespoons soy sauce 6 tablespoons maple syrup 2 cloves garlic, peeled and crushed

Method

Wipe the plantains over with white vinegar to clean them. Then peel and cut the peel into bacon sized ribbons.

Soak for at least 3 hours in lemon juice.

Using a teaspoon, scrape any flesh from the peel, to make the peel as smooth as possible.

Mix all the other ingredients in a bowl and move the soaked plantain into the marinate. Leave for at least 2 hours, longer if possible.

Heat the oven to 400°F and cook the not-bacon for 10 minutes, flipping once at the half way point.
