Creating the texture that judges noted "worked really well" requires proper walnut preparation and application technique for even coating. Chop walnuts to uniform medium-fine pieces - too large and they fall off, too fine and they don't provide textural contrast. Roll each filled dough ball thoroughly in chopped walnuts, pressing gently to ensure adherence. The nuts should coat most of the surface while allowing dough to expand during rising. This technique distributes nutty crunch throughout the finished bread rather than just on the exterior. Toast walnuts lightly before chopping for enhanced flavor, but cool completely before using to prevent melting butter or affecting dough temperature.
