Piccalilli: Britain's Tangy Mustard Pickle Relish
Piccalilli is a British condiment made from finely chopped vegetables - typically cauliflower, shallots, and green tomatoes - pickled in a sharp mustard and turmeric sauce. The turmeric gives it a vivid golden colour while the mustard contributes heat and depth. It is a natural partner for rich, fatty foods including cold meats, cheese boards, and, as demonstrated in this episode, seared liver mush. At home, shop-bought piccalilli can be incorporated into butter sauces: reduce it down and whisk in cold butter to create a punchy, complex beurre blanc-style emulsified sauce with minimal effort and maximum flavour impact.
