Proper Flapjack Baking Time and Texture

Voice-over: "Over baking will result in a tougher texture. Under baking will leave them too soft and claggy to eat." Timing is everything with flapjacks. Bake for 15-23 minutes depending on thickness, watching for golden edges and even color. The center should still have slight give when pressed lightly. They continue cooking in the hot tin after removal. Look for edges that are browning but not dark, and a surface that springs back slightly when touched. They'll firm up as they cool, so don't overbake trying to achieve firmness while hot.
