Tomme Cheese

Tomme is a family of semi-firm alpine cheeses made primarily in France and Switzerland, the name simply meaning "cheese" in the local dialect. Most Tomme cheeses are produced from whole or partly skimmed cow's milk, with a natural grey-brown rind and a pale, elastic interior. They melt smoothly and carry a mild, nutty flavour with earthy, grassy notes, making them versatile for cooking. At home, Tomme works well in grilled cheese, fondues, gratins, and cheese sauces. It pairs naturally with white wines and lighter reds, which is why the red team chose it as the thread running through their entire wine flight.
