Diamond Crystal Kosher Salt
We often specifically state in our recipe ingredients "Diamond Crystal Kosher Salt" because kosher salt brands actually have significantly different crystal sizes and salinity levels. Diamond Crystal has larger, flakier crystals and is less salty by volume than regular kosher salt. Since bread recipes are sensitive to salt ratios, specifying the type helps ensure consistent results.
If you decide to use an alternative product, start off by halving the amount of salt in the recipe since you're likely to be dramatically increasing the salinity.
