Crunchy, creamy, rich and homely - this is an unforgettable recipe for ice cream.
Ingredients
Half a loaf of wheat bread
Demerara Sugar
1 stick butter
1/2 pint milk and cream, mixed
2 level tablespoons caster sugar
1 egg, beaten
Grate the bread on a course grater. In a cast iron pan, melt the butter and stir in the bread and sugar until it forms large clumps. Keep over the heat until the clumps caramelize.
Put the milk, cream and sugar into a pan and bring it to a warm (but not boiling) temperature.
Pour over the egg. Return to the saucepan and cook it over a gentle heat, stirring all the time until the custard thickens.
Strain the custard. Stir in the caramelized bread.
To make ice cream, you can either use an ice-cream maker (this is a great option), or put a bowl of custard into the freezer and remove it every 20 minutes and whisk so that the ice crystals that form are broken up and don't become too 'icy'.
