Passionfruit Syrup

Sugar syrups are lovely things to keep in and use to enhance other dishes. This is a good basic recipe for a syrup.


Ingredients

  • 4 passionfruit

  • 3 tablespoons caster sugar

  • 1 pint water

  • lemon rind (1 lemon)


You'll need a heavy bottomed saucepan. Tip in the sugar and two healthy strips of lemon zest, and add the water.


Bring very slowly to the boil, stirring all the time, until the sugar has completely dissolved.


Cut the passionfruits in half, loosen the seeds with a teaspoon and throw all of it, shells too, into the light syrup. Return to the boil for 2 minutes, then reduce the heat to the lowest simmer you can manage. Simmer for 10 minutes, then remove from the heat.


Set aside and leave to rest for 12 hours (or more) and then bottle it in Kilner jars for use in the future.
