Brown Down Chicken Pie

Jason's filling of a spicy Caribbean Brown down chicken may have traditional roots, but it's never been seen in a pie until now. He explains: "The brown down is how it's cooked. So before you cook any of the filling, you heat oil in the pan with a bit of sugar so it caramelizes and adds a nice sweetness. I've got quite a few spices as well."

This needs more bake to get the color. This is very light. It's anemic. The chicken is overcooked. The vegetables are really very interesting. The spices are fun. It's really quite different. The pastry hasn't got much of a rise. You need to build up some more layers in there. There wasn't enough layers, which is why it's quite thin. The flavor of that though is fantastic.
