Host: "The judges would like you to make caramel biscuits. Your caramel biscuits can take inspiration from a caramel classic like the millionaire shortbread, or in Dutch, a stroopwafel. You need to make twelve delicious biscuits, either sandwiched or topped with set caramel. You have two and a half hours."


Paul Hollywood: "The caramel biscuits can be any kind of biscuit, but the dominant flavor must be caramel. So then the fun begins. The bakers need to make caramel, so it's a rich colour, almost the color of my skin."


Prue Leith: "The caramel must set, but not as hard as rock. And it mustn't flow out of the biscuit if you can't pick it up. That's not a biscuit, that's more like a pudding. They need to be elegant and exquisite. There should be nothing clumsy about these caramel biscuits."
