Madeira Cake Characteristics

A proper Madeira cake should have a close texture, beautiful plain appearance, a distinctive dome shape, and most importantly, a crack running across the top. This crack is the hallmark of a well-made Madeira and indicates proper baking technique. The cake should have a lovely golden color and when tapped, should sound hollow, indicating it's properly baked through. The texture should be firm yet tender, not dry.
