Kristen Kish: "Today, it's snack time in the Top Chef kitchen, Toronto style. Chef Dwight Smith, why don't you explain what a Jamaican patty is?"
Dwight Smith: "Essentially, a patty is a hand pie, but you'll recognize the flaky crust from the distinct yellow color. This is because we typically add curry powder or turmeric to the dough. Jamaican patties became popular here in Toronto after Caribbean migrants introduced it in the 60s and 70s."
Kristen Kish: "Chefs, for your quick fire challenge, we want you to create your own version of a Jamaican patty. You can fill it with whatever you'd like. Dwight, any advice?"
Dwight Smith: "Most patty shops will offer a little pepper sauce on the side, which is a Jamaican hot sauce, but don't overthink it."
