Kristen Kish: "For your elimination challenge in Milan, you'll be cooking and competing in the ultimate culinary matchup. A three part head to head tournament featuring ingredients from Milan to Cortina and also some ingredients from in between.


"In round one, you'll take on polenta. Cooking and eating polenta is so widespread around Milan that sometimes the citizens here are called polentoni, the polenta eaters."


"After the first round, the judging panel will immediately judge on your dishes, and the winner of the polenta round will automatically secure their spot in the finale."


"And then the three chefs that are left will compete in the next round. No dish is more beloved or deeply rooted in Cortina d' ampezzo then the casunziei. It's sort of a moon shaped ravioli, especially their red version made with beetroot filling. So in round two, we want you to create a dish featuring beets."


"Whoever wins that round will then secure their spot in the finale. The remaining two chefs will battle it out in the final round. You can cook whatever you want, but it must highlight gorgonzola cheese, which comes right from its namesake town in Northern Italy, right outside of Milan on the way to Cortina."


"Chefs, every decision you make, every ingredient you choose to put into your dish must be selected with intention to be worthy of the win."
