Paul Hollywood: "Now, cookie week is one of my favorite weeks. In the cookie bar, when we cut it, we want to see that lamination all the way through the cookie. Great flavors, great textures. If it's a shortbread, we want it crumbly and buttery. If it's more of a snap, you want to feel that snap with the knife. You don't want it to go too soggy."
Prue Leith: "I'm rather hoping that these bakers will bring something a bit new to the tent. I'm expecting unusual bakes, or at least unusual flavours, because America genuinely is the great melting pot of the world. And then, of course, we want it to look beautiful."
