"For our first signature challenge, our judges will be looking to see who can pass the bar. We're talking about cookie bars."

"Our judges will be looking for twelve identical layered bars with a cookie base. They must include a decorative element and have two visible layers. They should reflect who you are and have some personal meaning."

Paul Hollywood: "Now, cookie week is one of my favorite weeks. In the cookie bar, when we cut it, we want to see that lamination all the way through the cookie. Great flavors, great textures. If it's a shortbread, we want it crumbly and buttery. If it's more of a snap, you want to feel that snap with the knife. You don't want it to go too soggy."
